What kind of pizza do you make?

Wood fired Neapolitan pizza, also known as pizza Napoletana, is a traditional style of pizza that originated in Naples, Italy. It is known for its simplicity, thin crust, and high-quality ingredients.

Our dough is made in house from scratch, never frozen. We make it with just flour, water, salt, and yeast and leave it to rise for at least 48 hours. (Ask us any given day what the rise time is for your particular dough!) The resulting crust is thin and chewy, with a slightly charred edge and a soft center.

The sauce used on our pizza is delicious and no secret: delicious, high-quality Italian tomatoes, salt, and basil. The sauce is applied sparingly to the pizza, allowing the flavor of the tomatoes to shine through.

As for toppings, Neapolitan pizza is traditionally topped with fresh mozzarella cheese and fresh basil. Other toppings, such as sausage, peppers, and arugula, can be added, but the focus is on using high-quality ingredients that complement the simplicity of the pizza. This type of pizza is not intended to hold a high volume of heavy ingredients.

Our pizza is cooked in a wood-fired oven at a high temperature for just a few minutes, resulting in a crispy, flavorful pizza that is unlike any other. It is considered by many to be the gold standard of pizza, and is protected by the Associazione Verace Pizza Napoletana, which sets strict guidelines for how Neapolitan pizza should be made.
